also I googled the first name that came up to me, is that considered “researching a guess”?

Mostly I would say just use your own discretion when deciding if something is "allowed" since it's not that serious a game and just meant for fun.
If the category is "Element on the Periodic Table" then pulling up a list of all elements and narrowing it down to those whose names fit "N E _ _ _ M _ _ M" is a very similar process to just directly using a hangman solving software, so using this method of solving would be less in the spirit of Hangman.
Right now there's no letters so if you googled something like "scientists named John" I suppose it's fine since you're already filling four blanks on your own and you have no way of narrowing the pool further.

E M M _ / N _ E _ _ E _
I thought it might be EMMY NOETHER, that's why I guessed E, and this confirms it's her.

The way to narrow the pool is to guess more letters and having them confirmed?
Any time you're "going fishing" should be disallowed, otherwise you'd need a rule how many letters you need to guess before applying Google.
It's ok to look up "John Neumann" and find out he's missing a "von" and doesn't fit, but if you use "no other way", well, there is no other way for me to find a US county ending in "...gham" other than to consult a list of US counties, but that was ruled out. By you.
Let's watch another movie! (6/8/3/6 letters, no googling whatsoever necessary)

EAT was the right idea! But together, you've also uncovered another word!
